While Santoku knives generally lend themselves towards a chopping motion, we have also designed the blade with just enough belly to facilitate a slight rocking motion as well.\u003c\/p\u003e\n\u003cp\u003eThis is a revamp of our original \"NORA\" knife. We started by making a single Santoku design and that is all we sold our first year in business. Since then we have had roughly 4 different versions of our Santoku and I think we finally arrived on a blade profile and handle that really work great together.\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003e\u003cb\u003eENGRAVING:\u003c\/b\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003eThis knife is a tribute to a Harry Styles song called 'Watermelon Sugar'. \u003c\/p\u003e\n\u003cp\u003eAs a certified adult with kids, I'm embarrassed to admit how much I like this song.\u003c\/p\u003e\n\u003cp\u003eThe first time I heard this I was actually really irritated. (watermelon sugar??...wtf?) BUT\u003cspan\u003e \u003c\/span\u003esomewhere in between my first listen and the 37th I fell in love. (Not so much for Steve, I must note)  It is officially my summer theme song although I have no idea what it means or who Harry Styles even is.  Nevertheless, all that is sweet in summer is bottled up in this song.  It's clearly a fling but, right now, it feels relevant. Thus, we made a knife (two, actually) in its honor.\u003c\/p\u003e\n\u003cp\u003eAs a side bonus this knife smells of backyard BBQ's, balmy nights, and warm summer swims. \u003cspan\u003e \u003c\/span\u003eThe ant is a not so subtle nod to the \"watermelon sugar\" theme. I mean, who loves the sugary sweet taste of watermelon more than these persistent little arthropods, right?  A\u003cspan\u003end just to drive in the theme we engraved on the spine: \"Baby, you're the end of June.\" which is a line of lyrics taken from the song.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e \u003c\/p\u003e\n\u003cp\u003eGeneral Notes: This knife has been custom engraved.  The engraving was done via fiber laser so there is depth to the engraving more so than you generally see with an electro etch or CO2 laser. We do, however, keep the depth low so it does not catch food and minimally interferes with the primary cutting function of the knife. A small amount of stickage is normal around the engraved area, especially initially. (due to a very small burr that is formed around the engraved area) This will lessen over time as the blade is used.  The engraving should last as long as the knife but please note that it will slightly degrade over time as abrasives are used on the knife. We recommend the soft end of a sponge with soap and water for cleaning and mineral oil periodically to condition the blade (and handle). Keep in mind that stronger abrasives, such as steel wool, scotch brite pads, sand paper or stone sharpening directly on the engraved image will further degrade the image.  \u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003e\u003cspan\u003eHANDLE DESIGN \u0026amp; MATERIALS:\u003c\/span\u003e\u003c\/strong\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eEvery one of our knives is handmade, numbered and unique. The number on each knife represents the production order of our small company.  As such, if you have NORA #1000, that knife represents the 1,000th knife made here at NORA knives.  \u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003eThis NORA knife has been handled with a mix of G10 and stabilized curly maple wood. \u003c\/p\u003e\n\u003cp\u003eThe G10 portion of the handle is made from two colors: pink and dark, forest green. \u003cspan\u003e The pink and green is a play on the name of this knife: Watermelon Sugar.  \u003c\/span\u003e\u003cspan\u003eSo what is G10 you ask? G10 is an incredibly strong \u0026amp; durable fiberglass laminate that was originally used in the electronics industry.  It has been adapted in the knife making world and has proven to be an excellent material for handles as it has high strength, low moisture absorption and can be found in a variety of colors.  Its one of our favorite materials to work with outside of wood.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eWood stabilization is an added feature that we offer with our knives. Wood that is stabilized has been injected with a clear acrylic resin under a \u003cspan color=\"#ff0000\"\u003evacuum process. Stabilization helps to minimize, if not eliminate, any cracking, warping, shrinkage and\/or expanding of the material. \u003c\/span\u003eStabilized wood will not absorb water and is generally impervious to oils. The process helps to ensure your knife has a long lifespan in the kitchen. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e \u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003e\u003cspan\u003eSTEEL INFORMATION:\u003c\/span\u003e\u003c\/strong\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eAEB-L STAINLESS STEEL\u003c\/strong\u003e\u003c\/p\u003e\n\u003cp\u003eThis knife blade is composed of AEB-L stainless steel which is a high-quality Swedish metal, originally developed for razor blades.  Recently, steel suppliers have made this steel available in thicker sheets and it has proven to be an excellent adaptation for the cutlery industry.\u003c\/p\u003e\n\u003cp\u003eAEB-L has a beautiful balance of carbon and chromium and, with proper heat treatment, this steel produces both a very fine edge as well as excellent toughness and edge stability.  The fine grain structure also makes this steel very easy to sharpen. We believe it is one of the finest stainless steels available on the market today for use with kitchen knives.\u003c\/p\u003e\n\u003cp\u003eAs a side note, there are two things we like to mention about this steel:\u003c\/p\u003e\n\u003cp\u003e1.) This steel responds \u003cem\u003ebeautifully\u003c\/em\u003e to honing and if the knife is honed regularly it should need infrequent sharpening.\u003c\/p\u003e\n\u003cp\u003e2.)
