A gyuto is similar to a utility knife in that it is a multipurpose knife that can handle virtually every task including chopping, mincing and slicing.  Likewise, it works well with almost every medium including meat, fruit and vegetables.  The blade is a Japanese inspired profile with a fair amount of belly in the blade to allow for an ever-so-gentle gentle rocking motion.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan style=\"text-decoration: underline;\"\u003e\u003cstrong\u003eHANDLE DESIGN \u0026amp; MATERIALS:\u003c\/strong\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003eEvery one of our knives is handmade, unique and numbered. This NORA is a classic combination of colors including white, dark gray and a small pop of pink in the form of a stripe that separates the white and gray G10.  We like just the hint of pink in this knife.  Virtually all of the material on this knife is made from G10 and we added black G10 liners and black micarta pins as a contrast to the otherwise light colors in this knife.\u003c\/p\u003e\n\u003cp\u003eWhen it comes to sheer strength, durability and ease of maintenance there are few materials that can beat G10.  \u003cspan\u003eMany people ask us, what exactly is \u003c\/span\u003e\u003ca href=\"https:\/\/en.wikipedia.org\/wiki\/G10_(material)\" target=\"_blank\" title=\"Info on G10\" rel=\"noopener noreferrer\"\u003eG10\u003c\/a\u003e\u003cspan\u003e?  It is an incredibly strong \u0026amp; durable fiberglass laminate that was originally used in the electronics industry.  It has been adapted in the knife making world and has proven to be an excellent material for handles as it has high strength, low moisture absorption and can be found in a variety of colors.  Its one of our favorite materials to work with outside of wood. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eThis knife will look great for years upon years and need very little maintenance (unlike its wooden counterpart.)  \u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan style=\"text-decoration: underline;\"\u003e\u003cstrong\u003eSTEEL INFORMATION:\u003c\/strong\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eCPM- M4 CARBON STEEL\u003c\/strong\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eThe blade on this knife is composed of a high carbon \u003c\/span\u003e\u003ca href=\"http:\/\/noraknives.mom\/pages\/steel-options\" target=\"_blank\" title=\"Steel Information\" rel=\"noopener noreferrer\"\u003eCPM M4\u003c\/a\u003e steel.  M4 is the best carbon steel we have ever used in regards to blade performance.  After doing a wide amount of research on this steel, we decided to give it a go and have been extremely impressed with its performance thus far.  \u003c\/p\u003e\n\u003cp\u003eCPM M4 steel can be treated to a very high hardness.\u003cspan\u003e Hardness in steel generally equates to a finer edge and great edge retention. We took this blade to a solid 66 HRC which is incredibly hard compared to most production knives which fall in the mid to high 50's. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eThe high hardness allows it to maintain amazing edge retention but unlike other steels at this hardness its not as brittle or delicate.  It is actually highly wear resistant which means you don't need to worry as much about the knife chipping or breaking. As an added bonus, M4 is surprisingly corrosion resistant when compared to other carbon steels.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eIts a rugged knife for the performance it offers and this combination is rare when you harden steel to beyond 62 HRC.  Please note though that the steel isn't bullet-proof...if you drop the knife on a very hard surface or try to muscle it through a very hard object (i.e. hard gourd, thick bones, etc.), it is likely to chip.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eThe pros of this steel outweigh the cons, but it must be mentioned that this steel is harder to sharpen than many others so you will need to factor that into your decision. It does represent a bit more maintenance than other knives.
